What a delicious and simple meal. It came together swiftly, was exotic and flavourful. Sautéed peppers and onions with skewered chicken...Fantastic!

Chicken Satay

Serves: 2       Total Time: 30 Minutes

Ingredients

  • 12 bamboo skewers
  • 2 chicken breasts, sliced into thin strips
  • ¼ of a red pepper, sliced
  • ¼ of a green pepper, sliced
  • ½ onion, sliced
  • 6 mushrooms
  • 1 tbsp. peanut oil
  • ¼ cup + 1 tbsp. of
    Napoleon Peanut Satay Sauce

Directions

Step 1
Soak your bamboo skewers for at least 1 hour. Oil, then preheat your grill to medium-high.
Step 2
Thread your chicken slices onto the skewers in a wave like pattern.
Step 3
Toss your veggies into the wok topper and add the peanut oil and 1 tbsp. of satay sauce. Stir fry the vegetables while you cook your chicken skewers. Brush the skewers generously with the ¼ cup of Peanut Satay Sauce as they cook. It should only take about 10 minutes for the chicken and veggies to cook.
Step 4
Serve with the vegetables and rice.
