Grill Roasted Head of Cauliflower

Serves: 4 to 6   

Ingredients

  • 1 head of cauliflower
  • 1/2 cup of butter
  • salt, pepper, cayenne and garlic powder to taste
  • 2 tbsp. water
  • heavy duty tin foil, large enough to cover the whole head of cauliflower

Directions

Step 1
Preheat the grill to 300°F to 400°F
Step 2
Remove the stem and wash your cauliflower.
Step 3
Melt the butter and pour ⅔ of it into the bottom of the cauliflower while you have it upside down.
Step 4
Put the cauliflower right side up on a piece of tin foil. Pour over the remaining butter. Season to taste with salt, pepper, cayenne, and garlic.
Step 5
Pull up the corners of the tin foil so that it makes a dish. Pour the water into the bottom of the dish and then seal the cauliflower.
Step 6
Place it over direct heat and grill roast for 25 to 35 minutes.
Step 7
Carefully remove the cauliflower from the grill and open the packet. Watch out for steam.

I served this at an impromptu Thanksgiving dinner and what a hit! It was demolished. People were going up for seconds and thirds of everything.
