Sultana's Bacon Cheeseburgers

With Old Cheddar, Monterey Jack & Havarti

Sultana's Bacon Cheeseburgers

Ingredients:

    • 1½ lbs. ground chuck
    • ¼ lb. of pancetta, diced
    • ¼ cup of havarti cut into cubes
    • ¼ cup of Monterey Jack cheese cut into cubes
    • 1 small shallot, diced
    • 1 egg
    • 1½ tbsp. Orgasmic Onion Seasoning
    • 1 tsp. dried mustard
    • 1 tsp. salt
    • freshly ground black pepper to taste
    • 2 tbsp. Worcestershire sauce
    • 1 tbsp. Sriracha or 1 small jalapeno, diced
    • 2 tbsp. ketchup
    • 2 cloves of roasted garlic
    • 3 tsp. oil
    For Serving
    • 4 to 6 cheese buns - kaiser style
    • lettuce
    • sliced onion
    • sliced tomato
    • 12 slices of bacon, cooked crisp
    • 6 - 12 deli slices of extra old cheddar cheese (the thin flat square ones)
    • condiments to taste
TIP:

Do not squish the burgers with your spatula! This presses out the essential juices, leaving you with a dry and tasteless burger.

If you're worried about under done burgers, it can be a pain to try to use a traditional meat thermometer, try using a wireless digital one, it has a smaller probe and you don't have to hold it up.

Sultana's Bacon Cheeseburgers

Ingredients

  • 1½ lbs. ground chuck
  • ¼ lb. of pancetta, diced

  • ¼ cup of Monterey Jack cheese cut into cubes

  • 1 egg
  • 1½ tbsp. Orgasmic Onion Seasoning
  • 1 tsp. dried mustard
  • 1 tsp. salt

  • 2 tbsp. Worcestershire sauce
  • 1 tbsp. Sriracha or 1 small jalapeno, diced
  • 2 tbsp. ketchup
  • 2 cloves of roasted garlic
  • 3 tsp. oil
For Serving
  • 4 to 6 cheese buns - kaiser style

Directions

Step 1
Start by prepping your pancetta, cook it over medium heat with half of the sliced shallot in a frying pan.
Step 2
In a large bowl place the ground chuck, havarti and jack cheeses, the rest of the shallot, the egg, Orgasmic Onion, mustard powder, salt, pepper, Worcestershire, Sriracha (or diced jalapeno), roasted garlic, and ketchup. When the pancetta and shallots are cooked and nearly crisp, add them too. Using your hands, squish and combine the all the ingredients. Form patties that are about ½ an inch thick and have enough surface area to cover your bun and then some – they shrink when you cook them. Another tip, work the meat while it’s nearly too cold to handle. If it gets too warm while you’re mixing it, chill the meat in the fridge for 10 to 15 minutes before making patties.
Step 3
Place your patties onto a baking sheet with parchment or waxed paper on it. Let the meat chill in the fridge and the flavours combine for about 15 minutes.
Step 4
Preheat your grill to medium high, about 450°F. You will likely be using both direct and indirect cooking methods for this.
Step 5
When you are ready to grill, oil the tops of each of the burgers with about ½ tsp. each, and place them over direct heat, oiled side down. Grill over direct heat for about 8 minutes per side. If they’re not cooking in the middle, move the burgers to the “cool” side of the grill and grill, bake for another 10 minutes or so, until an internal heat of 160°F. While they’re finishing cooking, you can melt one of the squares of extra old cheddar over the tops and toast the cheese buns.
Step 6
Serve these delicious burgers with your favourite condiments (like ketchup, mustard and garlic mayo), piled high with two strips of bacon and topped with another slice of extra old cheddar. Oh and don’t forget your favourite sides like fries, salad or raw veggies and dip.

I took the rules and threw them on the porch last night, like Fred Flintstone putting out the sabre tooth tiger (very unceremoniously). These burgers are juicy and huge and delicious and GINORMOUS. But with the size of the buns they make at the bakery now, you have to make a huge burger.
