Turkey Cutlet Sandwich

With Fire-Roasted Tomato Salsa

Turkey Cutlet Sandwich

Ingredients:

    Fire-Roasted Tomato Salsa
    • 1 onion
    • 4 plum tomatoes
    • 2 cloves of garlic, minced
    • 1 tsp. Bone Dust
    • 1 tbsp. extra virgin olive oil
    • ¼ cup chopped fresh herbs, I used parsley and rosemary
    • ½ cup of Fire-Roasted Tomato Sauce
    • ¼ cup of sliced black olives
    • 8, 2-3 oz. turkey cutlets, or leftover turkey meat
    • 3 tbsp. Mediterranean-style rub
    • 1 cup of gourmet barbecue sauce
    • 1 large loaf of crusty italian bread
    • ¼ cup of extra virgin olive oil
    • salt and freshly ground pepper to taste
    • ½ cup of shredded mozzarella cheese

Okay this was absolutely delicious. I have an obsession with sourdough bread. Like OB-SEH-SHUN! I actually had to cut the recipe down a little. There were only two of us eating that night, so I sliced the bread and toasted it, then melted the cheese onto it. Followed by the leftover turkey that has been grilled to reheat. The Fire-Roasted Tomato Salsa was gloriously garlic-y. Like it was intense, even after brushing our teeth.

Turkey Cutlet Sandwich

Ingredients

Fire-Roasted Tomato Salsa
  • 1 onion
  • 4 plum tomatoes
  • 2 cloves of garlic, minced
  • 1 tsp. Bone Dust
  • 1 tbsp. extra virgin olive oil
  • ¼ cup chopped fresh herbs, I used parsley and rosemary
  • ½ cup of Fire-Roasted Tomato Sauce
  • ¼ cup of sliced black olives
  • 8, 2-3 oz. turkey cutlets, or leftover turkey meat
  • 3 tbsp. Mediterranean-style rub
  • 1 cup of gourmet barbecue sauce
  • 1 large loaf of crusty italian bread

Directions

Step 1
Start by prepping the Fire-Roasted Tomato Salsa. Preheat your grill to medium, about 350°F.
Step 2
Grill the onions and tomatoes until they are tender and lightly charred. Transfer them to a cutting board and let them cool for a little while before coarsely chopping.
Step 3
In a bowl, combine the copped onion and tomato with the garlic, Bone Dust, oil, herbs, tomato sauce, and olives. Mix it well and set aside while you make the rest of your meal. At least 30 minutes, so that the flavours meld.
Step 4
Season the turkey fillets with Mediterranean-style rub, gently pressing the rub into the meat. Grill the seasoned turkey for 2 to 4 minutes per side, basting with your favourite barbecue sauce until it’s crisp and fully cooked. Remove from the grill and set aside.
Step 5
Now to assemble the sandwich. Cut the top of the loaf off. Scoop out two-thirds of the inside from the bottom half of the loaf. Brush the insides with oil and season with salt and pepper to taste. Line with the turkey cutlets, mozzarella cheese and finally the salsa. Replace the top half of the loaf and slice the whole loaf into 4 sections. Serve immediately.
Thanksgiving is over in Canada, on its way in America. But what is to be done with the leftovers? This Turkey Sandwich is a filling and fantastic way use up that leftover turkey in a way that isn't reminiscent of a big plate filled to overflowing with mashed potatoes and cranberry sauce. There's nothing like a turkey sandwich when you have leftovers. But that can get boring if you've had a few turkey dinners over the holidays. Mix it up a little with this amazing sandwich. It's got everything you could want. Buttery bread, melty-gooey cheese, tender and flavourful vegetables and meat, heaps and heaps of meat!
