Crispy Roast Potatoes
Serves 4 to 6

Ingredients:

    • 4 large potatoes, washed and cut into 1-inch chunks
    • or 24 baby potatoes, washed and cut in half
    • 2 tbsp. goose fat
    • ½ tsp. garlic powder
    • ½ tsp. Bone Dust
    • cooking spray
    • tin foil

*This recipe is fantastic. Just toss it on the grill with your meat and let it go. As long as you’re doing a grill bake or a plank, these will come out golden brown and crunchy on the outside and fluffy on the inside.

Sometimes simple is the best, and these are super simple. An homage to the delicious roasted potatoes that my Grandmothers make. The goose fat really adds a nearly creamy quality to the flavour. In fact, you could pretty much get away without seasoning the potatoes, except for a little bit of salt to finish them off. Crispy Roast Potatoes

Serves: 4 to 6       Total Time: 60

Ingredients

  • 4 large potatoes, washed and cut into 1-inch chunks
  • or 24 baby potatoes, washed and cut in half
  • 2 tbsp. goose fat
  • ½ tsp. garlic powder
  • ½ tsp. Bone Dust
  • cooking spray
  • tin foil

Directions

Step 1
Prep your potatoes, then toss with the bone dust and garlic powder.
Step 2
In a microwave safe dish, melt the goose fat for 10 to 35 seconds. Toss the potatoes to coat with the goose fat.
Step 3
In a 9 by 13-inch baking pan lined with tinfoil and sprayed with cooking spray, pour the potatoes into the pan in a single layer.
Step 4
Grill bake over indirect heat for 30 to 45 minutes at 350° to 400°F.

At family meals my Great Grandmother and now my Grandmother would make these FABULOUS roasted potatoes. So crunchy on the outside and fluffy on the inside. They have told me their secret, which I will not reveal. But I think I can do something almost as good with this recipe. When I say almost as good, well they're still pretty darn delicious, but it's just not the potatoes that Grandmothers make.

Now you remember the goose fat that we kept from the Chirstmas Goose recipe? Well I hope you kept that golden delicious marvel of nature in your freezer for just an occasion such as this. Tossing your potatoes in your favourite herbs and then roasting them in the goose fat makes for incredibly crispy and flavourful potatoes that go perfectly with your favourite feast.
