It is mid-afternoon on a Tuesday, when I get a text. My friend is in town and wants to come for a visit. Naturally I ask if she wants dinner. (Me and my big texting fingers) But what do I make? I haven’t got a heck of a lot in the fridge and certainly was not prepared for guests. But, from the few things on hand, came a delicious sandwich that rocked our worlds! … well our taste buds anyway.

METHOD

1. Oil your grids, then preheat your grill to medium-high, about 400°F.
2.  Rub the Cajun Creole and Savoury Chicken and Rib Spice into the meat. Grill over direct heat for 4 to 6 minutes per side, or until the meat is cooked through and the juices run clear. When the chicken is nearly done, in the last minute or two of cooking, place the cheese on top of the chicken to melt.
3. To caramelize the onions, put the butter into a frying pan, or the Cast Iron Frying Pan over medium heat. Use one of the onions to make sure the entire bottom of the pan is covered with butter. Lay the onions down in one layer trying to leave the rounds in one piece. You may have to do batches. Sprinkle the tops of the onions with the sugar. Let the onions brown and become tender. Takes about 10 minutes.
4. Assemble the sandwich with a layer of mayonaise, caesar dressing, aoli, or tatziki followed by lettuce, the chicken, and the caramelized onions on top. Eat up and enjoy, maybe with a salad?

This meal wound up being great! The company, and the food made the evening something special. This recipe is easy to modify as well. Instead of Mozzarella, you could add goat cheese, or your favourite cheese. Try adding a hot pepper to your caramelizing onions for some added kick. There is a tonne you can do with this recipe to change it up a little. Have fun with it!
