Grilling the bananas gives a little char flavor to this shake. It blends well with the charcoal flavor notes in the Gentleman Jack Rare Tennessee Whiskey.
Separate the vanilla pod from the gooey inside by slicing the pod in half with a small knife, opening up each side and scraping the inside out with the knife. Keep the skin (pod) and the insides separate.
Whisk together the eggs, sugar and tapioca starch and set aside.
Over a double boiler, bring the cream, milk and vanilla seeds and pod to a low boil. Remove from heat and whisk into the egg and sugar mixture. Continue to stir this mixture over double boiler, with a wooden spoon, for 10-12 minutes or until the mixture begins to thicken and you can “blow a rose” on the back of the spoon. Remove from heat, strain through a fine sieve and allow to cool.
Place in the refrigerator and allow mixture to set.
Preheat grill to medium-high heat, 450-550°F
Spray bananas lightly with nonstick cooking spray.
Grill bananas for 2-3 minutes per side until lightly charred.
Remove from grill and allow to fully cool.
In a blender, add the grilled banana, vanilla custard and ice cream and blend until smooth.
Add the Gentleman Jack, chocolate liqueur and a big squirt of chocolate syrup. Then blend a little more.
Pour into milk-shake glasses.
Garnish with chocolate shavings and serve immediately.
Enjoy this treat on a hot day with friends and you cannot go wrong. You can even remove the alcohol and serve it to children, they won’t even know that there’s fruit in it… unless you tell them.
