This weekend was beautiful, the weather was prime for grilling! I hope you all got out there like I did.
I made a delicious pork roast with potato fans from heaven. The garlic and ginger made the pork sing, while the garlicy and salty potatoes smothered in cheese and sour cream (or greek yogurt) balanced the slightly sweet and tangy pork. Add your favourite veggies to the mix and you have a fantastic weekend meal.
If there are a generous amount of juices from the rested meat and then left in the baking sheet after cooking with the potatoes, use them to make a light gravy to go with the meal.
Will you believe that this was my first time eating outside this year? Well it was. But we made it worth it. The pork was sweet and garlicky, the pan sauce had a tang to it from the ginger, all was offset beautifully by the potatoes. All in all a lovely meal. I hope that you enjoy making and eating it as much as I did!
