Szechwan Ribs

Smoked on the Apollo

Posted on July 16, 2012
These ribs were delicious, but came with a lesson (highlighted in red). But when you see your favourite foods on sale, I strongly suggest you get it. You may find use for it in surprising ways.

I would also like to note that I would not be able to get as much smoking done as I have recently without the help of my husband, who has been helping with the lifting, monitoring and cleaning of the grill. It is hot and heavy when you are using a full water basin.

Smoked Brisket

for Pulled Pork Style Beef

The cat saw the meat as we were setting up. She is plotting to get her paws on some. Certainly better than that canned stuff.

Update Smoked Pork

for Southern-Style Pulled Pork

Posted on July 13, 2012
Last weekend… yes I know, it took me that long to get this up on the blog… I smoked a pork loin and a beef brisket to make pulled meat. That does sound naughty does it not?   …Anyway. I smoked Pork for Southern-Style Pulled Pork. Here is what happened in pictures taken on my lovely new Nikon camera.

Bacon Wrapped Pork Loin

Bacon Wrapped Pork Loin

with Roasted Apple Stuffing and Sweet Potato Fries

Posted on July 06, 2012

So I had this pork tenderloin see? And well… what the heck can I do with it? Ummm… well what do we have in the fridge? Oh hey! I have bacon, and apples… and cooking sherry…onions? Oh dear. And a plank, I am feeling a little “ARRGH” with all the ingredients, maybe I will make it walk the plank while I am at it. Oh hey! A sweet potato! Let’s try those fries again! (Literally folks, this is what is going through my head as I stare into the fridge and pantry!)

Eventually, something came to me. So I am going to move on and GUSH about my new camera. I was generously gifted a Nikon D80 just days before cooking this soon to be masterpiece meal. I must say, there is a learning curve when you have been working with a Canon for … almost 20 years…(momentary self pity of oldness) AND we are back!

Now without further ado. I present to you … a pork recipe.

Broccoli Salad

Broccoli Salad

with Cheddar, Carrots and Apple

Posted on July 06, 2012
A brilliant mind in the office suggested that each of us bring in a salad one day a week. We all could sign up for a preferred date and bring in our favourite recipe. I was at the farmer’s market when I spied beautiful broccoli crowns and ripe apples. Not to mention the sweetest BIGGEST carrots you have ever seen. So inspired, I set about making a most delicious Broccoli Salad.

Low and slow is the key to any smoked recipe. These smoked beans are no exception to that rule. Sweet and smoky, you can bring these to a potluck or enjoy them on a camping trip and the recipe is real simple.

Grilled Chicken Sandwiches

Grilled Chicken Sandwiches

with Caramelized Onions and Mozzarella

Posted on July 05, 2012
It is mid-afternoon on a Tuesday, when I get a text. My friend is in town and wants to come for a visit. Naturally I ask if she wants dinner. (Me and my big texting fingers) But what do I make? I haven’t got a heck of a lot in the fridge and certainly was not prepared for guests. But, from the few things on hand, came a delicious sandwich that rocked our worlds! … well our taste buds anyway.
