This was a super delicious dinner. Another success in my baby steps towards eating fish on a regular basis. You will definitely want something heavier to go with this, like fresh bread or potatoes, but all in all a very great light meal.

You need to use some decent quality chocolate, and fresh too. You can see in the image above that the chocolate has gone a little grainy. Most of the reason is due to the fact that I was using a low quality, old chocolate..and they were chips. Another factor that makes this happen is too much heat. If your water is boiling and not simmering happily, this can also happen (too hot – too fast) I recommend that you keep this in the freezer when not being eaten as it tends to get kind of melty. Also when sending it in lunches, wrap it tight so that the minty fresh stays between the layers. Thin mints beware, there is a new player in town and this is it! These have a habit of disappearing before anyone can get their hands on them.They’re also Stormageddon approved. (That’s the cat’s name)

Okay. So .. not only do these have some protein and fibre and all that healthy stuff in them, they’re unbelievably tasty too! I am really on this greek yogurt kick, and you really cannot blame me! This stuff is a great replacement for sour cream in just about everything, you can put it in smoothies, flavour and freeze it for some fro-yo (which is not cursed)…and well yeah, it’s just good. Sorry distracted, brownies, oh so good brownies. Less calories than those chemically enhanced snack pack low cal thingys you get in the grocery, and you can send them in lunches, the husband and kids and well everyone won’t know that they’re more healthy than the “other” ones. Seriously you can’t go wrong with these brownies. **Applesauce. I don’t have applesauce frequently, just something that I never get. But if you run across a need for applesauce and don’t have any, cut a small-ish, about 3″ across, apple and core it. Leave it in the skin and microwave it for about 40 to 45 seconds. This will mush-i-fy the insides, just scrape them out into whatever you’re baking or need the applesauce for. This makes about ¼ cup.

Serve these as an appetizer or snack at your next gathering and watch them disappear!  These are so very good. For a more asian flavour to them, use teriyaki or hoisin sauce instead of barbecue sauce, or you can change out the Fire Roasted Garlic for your favourite barbecue sauce instead.

For a little less of a garlic-pow you can use roasted garlic instead. It is mellow and more sweet than raw garlic.

Seriously I am going to try caramel from Kernels next! You know the stuff they put on that oh-so-good caramel corn? That has to be super delicious right? On a sweet potato? All that salty and sweet together... But for now, I will stick to my honey garlic sweet potato goodness.

These cupcakes turned out very well, everyone who tried them was surprised when they found the cherry filling. This recipe is also easy to adjust to your own needs too. Add chocolate chips, use cake pans instead, you get the idea, you can even change up the filling if you wanted to - fudge, strawberries - you get the idea.

This hot sauce is good. Has a tangy smell and pairs well with pretty much anything you want some heat on. Try it in eggs or on your appetizers. As a dipping sauce or garnish. The bright orange colour is fantastic that way. Try this stuff today. There’s nothing better than homemade.

Just remember that this is a hot sauce and you are working with the second hottest peppers on the planet. Remember to wear gloves while working with the peppers. Use a non-porous cutting surface and do not touch any sensitive areas on your body while working with these peppers. Wash thoroughly with a grease removing soap like dish soap before handling anything.

These are so great, you can add whatever you want to them really. Bacon bits? DO IT! You have chopped veggies? GO FOR IT! Baked beans? TOP IT! When it comes to stuffed potatoes, there are no rules!*I get regular plain greek yogurt and use it as sour cream. It is very thick and rich, higher in protein, and will function the same in dips, on fajitas and tacos, even in stroganoff! Give it a try, bet if you don't say anything, no one will notice that you used Yogurt instead of Sour Cream.

I recommend the Super Stuffed Potatoes if you can't make something akin to the fresh cut fries that we know and love. So this wasn't rotisserie chicken, although if I had had a whole chicken on hand, I would have done the rotisserie thing, but we didn't want to wait that long. So I used the sear and grill roast method which came out beautifully. And yes we all totally went there. If you're a Chalet fan, the chicken, fries, buns and anything else you get there is just a carrier for that amazing Chalet Sauce. We had leftover sauce, emphasis on HAD.
