Okay, so you’re going on a picnic and have been charged with the duty of bringing a side dish of some sort. You have also been told that if you bring another one of those jellos with the fruit and marshmallows in it, you will be banned from all picnics forever. SO what to do?

Solution!
Why not make this cheesy macaroni salad that will blow the minds of all who eat it and make you the reigning monarch of the picnic basket forever.

METHOD

1. Cook pasta in a pot of boiling water until just tender (al dente). Drain, and toss with olive oil and then let cool.
2. In a large bowl, whisk together the mayonnaise, sour cream, vinegar, lemon juice, paprika, cumin, and black pepper. Add pasta to this mixture, along with the green onions, red onion, carrot, all 4 cheeses, parsley and dill. Mix well and season with salt and pepper.
3. Cover and refrigerate for at least 1 to 2 hours before serving.

While cooking, and in healthy eating, making your own is the better way to go. This pasta salad is a fantastic treat, and goes so much further when sharing with others than just a tub of store bought. You can take this salad up another notch as well by making your own mayonnaise too! Don’t forget that you will be monarch of the group gathering if you bring this one.
