Tomatoes are a fun conundrum. They’re technically a fruit, but they’re used in mostly savoury applications, which confuses most into thinking they’re a vegetable, myself included. But whatever they are, I love using tomatoes in my cooking, mostly in sauces and thick stews, cold in salads and they’re at their best in Bruschetta!! This recipe for tomatoes is delicious and served hot. These tomatoes are delicious and served hot.
These were pretty good. But I fear they may have gotten a little overcooked while I was working on other parts of the dish. Not only were they bursting with flavour, well… mine kind of burst. So when you should take them off the grill, do it. And if you can, use a spoon to support it.
I know that last week I mentioned my personal attempt to go gluten and dairy free. You can get the cheese and the bread crumbs that are both gluten and dairy free! Some regular supermarkets even have whole aisles dedicated to gluten free foods! But the dairy is a little harder to come by. But this was a fantastic way to have my foods and eat them too!
