Well it is true. Most everything is better wrapped in bacon. These burgers are as well. Once again using the magical beast where comes from bacon, pork and ham, we shall create a delicious meal of pork-tacular proportions! (And have a little salad too)
Place 1 lb. of pork in food processor. Process meat to a smooth texture. Turn meat out into a large bowl and add the other 1 lb. of ground pork. Mix lightly, cover, and refrigerate until needed.
Place diced cheese in the freezer for at least 20 minutes.
Preheat grill to medium–high (450°F/230°C).
Brush onions and peppers with olive oil and season with Hot and Spicy BBQ Seasoning and Rub. Grill until lightly charred and tender. Remove and let cool slightly. Dice and set aside to cool.
Add completely cooled onions and peppers, green onions, and Burger Seasoning to the pork mixture and mix well to fully incorporate ingredients.
Add frozen cheese to the burger mixture and mix. Form into 8 equal–sized patties as uniform in size and thickness about ¼ inch thick as possible. Wrap 2 slices of streaky bacon around each patty, like a parcel, and secure with a toothpick.
Place patties in the refrigerator for 2 hours to chill and set.
Preheat grill to medium (350°F/175°C).
Grill, basting with the Italian Marinade, until patty is fully cooked, bacon is crisp and cheese is melting and soft, about 5 to 6 minutes a side.
Slice the ciabatta buns in half and grill, cut sides down, until golden brown.
Place burgers on a bun and serve with Red Cabbage Slaw, your favourite garnishes, and more marinade on the side for dipping.
Red Cabbage Slaw:
Preheat a large skillet on medium–high heat and add the oil. Add the cabbage, apples, and onions and sauté, stirring occasionally, for about 6 to 8 minutes, or until the slaw has just begun to soften.
Add the honey, vinegar, and caraway, and stir well to combine. Remove from heat and let cool.
Season with salt and pepper and serve. Especially good on or beside pork
This recipe is a great little spin on the whole home-made burger thing. Its tasty and the kids will like it too. Plus you can sneak some veggies in with the delicious slaw. It is well worth the prep.
