I needed something to serve to guests on a Sunday evening, and I also needed a nutritious breakfast for the next day. So I decided to make some Candied Pecan Banana Bread. This quick bread recipe is not only moist and tasty as any banana bread should be, but it's actually full of things that are pretty good for you too. I used gluten free flour and you couldn't tell the difference, which is rare, and the candied nut topping gave you a satisfying crunch to top it all off. You'd never guess that this was made on the grill. Oh, did I mention that it's also versatile as heck too? You can throw it in a loaf pan for quick bread, muffin tins, mini loaves - which make fantastic little gifts, and even a cake pan if you wanted. You just have to remember to watch that baking time.

Homemade Mac 'N' Cheese With Goat Cheese, well if you remember last week, we celebrated Cheese Soufflé Day with Easy Goat Cheese Soufflés, and the cheesy delicious base that made it all come together was so good I wanted to turn it into my cheese sauce for some good 'ol Mac 'N' Cheese. Let me tell you, you have been making macaroni and cheese wrong for a long time and it's time to change our ways. Adding a crunchy cheese flavored cracker top and baking it until it's super crisp doesn't hurt either.

Part of celebrating Cinco De Mayo is having a fantastic dessert to go with your amazing meal. I was going to do some sort of "Mexican" food like a quesadila or chimichanga filled with fruit and chocolate, but I had all these limes and tequila, and let's face it, you know my opinion on cheesecake. So I made Margarita Curd Cheesecake instead. First of all I was quite inspired by a dessert I taste tested at Costco a few weeks back and fully intended on recreating - a lemon curd, crumble topped cheesecake pie, and with Cinco De Mayo around the corner too, I had all the stuff to make a rockin' lime curd. Well I added tequila and things got a little out of hand, and into my mouth. You have to make this delicious, creamy dessert.

Baked Potatoes Stuffed With Meatloaf. I don't know what happened. One minute I am making baked potatoes for dinner, the next minute strange things started happening and suddenly my potatoes were hollowed out and filled with an insane meat mixture that made the mouth moisten. Once sufficiently baked, I used the remaining potato to top these incredible creations, and when they came out of the grill, the clouds separated and a shaft of sunlight hit this miracle creation.

I've done sticky, saucy, and even spicy wings, but I haven't done dry wings since the Lemon Pepper Wings a while back (they're really good by the way you should try them). These Sweet Garlic Dry Wings With Spicy Dip have a caramelized coating of garlic and brown sugar that is at once salty and sweet. Then you dunk it in a creamy dip that you think is going to be something like buffalo ranch, but you're blown away as a spicy mixture of sour cream, sriracha and sambal olek tackle your tongue.

Crispy Potato Galette is like crunchy potato heaven. A delicious pie of crispy potatoes. It's like nothing I have ever had. And I think this may be the only way I prepare potatoes forevermore. Can you tell I enjoyed it? Are you sure? Yes, I thought that it was strange that this recipe is named like a razor, but the only thing this recipe is cutting is your preconceptions of what a potato side dish could be. I took it a little easy on the flavors, opting for salt and pepper and a little fresh rosemary basically, and what we got in return was pure awesome. Go ahead, try this for yourself! Right now! I mean it! I say that a lot don't I? What can I say? I love food.

It may take a little prep work but this side dish is completely worth the added labor. Although, getting into that box of "scalloped potatoes" that's been in your pantry for who knows how long is really a lot of work. This recipe is far easier than trying to stick your thumb through that "perforated" top. And when you can't do that you resort to using a knife, which works, but you stab the packet with the flavor powder in it. The powder goes everywhere and you have the dog licking at the floor and you haven't even gotten to the cooking part yet. Naw, go the route of home made and save yourself the hassle. Plus you get all the flavor!
