While visiting my favourite butcher, Country Meat Cuts, in Maple, I found butterflied, skinless, boneless, chicken breasts. They were perfect for something, but I had no idea what. They got pulled out to defrost for when I got home one night after work, and I had no idea what to do with them! So into the fridge I dove, wondering what I had on hand. I pulled out bacon, garlic, onions, and cheese. From the pantry, I located the savoury chicken and rib rub, and the country herb spice. Then I went to town.

It's nearly turkey time again! Christmas, Hanukkah, and even Kwanzaa too, but one thing is for sure when it comes to holidays like these, big meals. And what better way to prepare them than on the grill!? This succulent birdness is easy as apple pie.. well if you make apple pie and think that pastry is a snap...Okay easy as apple pie if you buy it from the grocery...ANYWAY... it can be done on the rotisserie or on the poultry stand. One of the biggest problems everyone has with turkey is overcooking it so have a care, after the first 2¾ hours you want to start checking the internal temperature when you baste. Dry birds are disappointing!

Kids are picky. I know a few that will only eat chicken fingers, or otherwise breaded chicken and nothing else. And they only eat it with ketchup too! Well here is a recipe that will help. Not only can they help make the food, with the exception of the hot grill parts, but you can use the barbecue and feel a little better for it.

I received an email from one of our readers, he requested a recipe for Goose on the Grill. Well there is a thought! Another thing we have yet to try here! First of all: Great idea! Thank you! Second: What the heck do I know about geese?!

Goose is another poultry that can be purchased and consumed. (Who'd have thunk it?) It used to be the "thing to have" at Christmas, but it seems, like with many traditions, to have fallen by the wayside.
You can cook your goose in many different ways on the grill. You can also buy it in the same way you purchase a chicken and turkey, or even a duck. Meaning you can get it as a whole, or in pieces like breasts and thighs. A general rule is that the smaller and younger the bird, the better tasting it is.
Goose is like duck in the sense that it is mostly dark meat and there is a lot of fat that needs to render out. The two best ways to cook a goose on the grill are to use a rotisserie, or to smoke it. Either way you will need a drip pan to collect all that precious grease. If you are using the Chicken Roaster you will have to keep an eye on the bird and drain off the fat every so often so that it doesn't overflow.
