Having a good rapport with your local butcher is essential to getting quality cuts of meat. This recipe calls for some fairly specifically cut pork chops. You can purchase a whole roast and slice it thick to suit your needs, or you can have your local butcher do that for you.

Some may be concerned about the safety of cooking pork that is this thick. It is safe to eat pork that has been cooked to an internal temperature of 140°F you are safe. If there is a concern, use a meat thermometer to make sure.

This is almost a hot salad. And on a day like today...the weather, by the way is a balmy -17°C with the wind chill, blowing and snowing ... you want something that is bright, cheerful and reminds you of warmer, happier days. So back to hot salad. You read that right. At its most base level, this is just grilled vegetables. But like Shrek, it has layers. Balsamic vinegar and dijon mustard play off the sweet and smoky flavours of the vegetables to create a side dish that is absolutely heavenly.

Grilled fruit is a great way to add to any meal, the sweetness of fruit is only made better as the natural sugars caramelize from the heat and flame. Just imagine a beautiful pork loin with grilled pineapple, apricots or apple! Or an appetizer of creamy cheeses served over grilled pears and apples. Then dessert, ohhhh dessert! It can be as simple as fruit sliced into large chunks, caressed with butter and sprinkled with sugar, cinnamon, nutmeg, or any combination of the three.
The question is, what HAVEN'T you thought of to do with fruit on the grill?

Risotto. I had never heard of it until watching Hell's Kitchen, my guilty reality-show pleasure. Gordon Ramsey is obsessed with the stuff, and now everyone else is too. So here is a recipe that, although it is unconventional, works really well to produce a light side dish that pleases all.
