Garlic Basil Marinade 2/3 cup dry white wine or white wine vinegar1/3 cup of olive oil or cooking oil 1 green onion, thinly sliced 2 tsp dried basil, crushed 1 tsp sugar 2 cloves garlic, minced Stir together all the ingredients in a small bowl. Pour over chicken or seafood in a plastic bowl or shallow dish; close bag. Refrigerate for 4 - 6 hours, turning bag occasionally. Makes about 1 cup. Marinades Put the meat and marinade in a self-sealing bag, set the bag in a shallow bowl or dish, turning the bag occasionally. Marinade in the refrigerator, never at room temperature. For tenderizing, marinades must contain an acid, such as vinegar or lemon.
